In fact, this was two days ago, but for the sake of narrative (!) I added the Diyarbakır trip to the long May (I am writing this in Ankara, actually)

This dessert is called “halka tatlısı”, which can be translated as “ring dessert” or sometimes simply referred to as “rings” or “syrupy ring dessert” in certain regions. It’s typically made from a dough containing flour, semolina, and yogurt, which is deep-fried and then soaked in syrup. It has a circular shape, a crispy exterior, and a sweet syrupy flavor. It’s a common dessert in Turkish/Kurdish cuisine, especially popular with street vendors.
